Grilled Chicken and Grilled Courgette Salad with Feta and Walnuts

DIFFICULTY: Nice and easy
  Prep: 20 minutes (plus 30 minutes for marinating the chicken)
Cook: 15mins

 

Ingredients (Servings: 2-4)

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

For the Salad

  • 2 medium courgettes, sliced into rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 100g mixed salad leaves (e.g., rocket, spinach, lettuce)
  • 1 small red onion, thinly sliced
  • 100g feta cheese, crumbled
  • 50g walnut halves, lightly toasted
 
 

Method

1. Marinate the Chicken

In a small bowl, mix 2 tbsp olive oil, paprika, garlic powder, dried oregano, salt, and pepper.

Rub the mixture over the chicken breasts. Let it marinate for at least 30 minutes.

2. Grill the Chicken

Preheat a grill or grill pan over medium-high heat.

Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked through and nicely charred.

Once cooked, remove from heat and let it rest for a few minutes before slicing.

3. Grill the Courgettes

Toss the courgette slices with 2 tbsp olive oil, salt, and pepper.

Grill the courgette slices for about 3-4 minutes on each side until they are tender and have nice grill marks.

4. Assemble the Salad

In a large bowl or platter, arrange the mixed salad leaves.

Top with grilled courgette slices and thinly sliced red onion.

Sprinkle the crumbled feta cheese and toasted walnut halves over the salad.

 

5. Add the Chicken

Slice the grilled chicken breasts and place them on top of the salad.

6. Serve

Drizzle with a little more olive oil or your favourite salad dressing if desired.

Serve immediately and enjoy your healthy and delicious grilled chicken salad!

Notes

You can use a mix of fresh herbs for extra flavour.

To toast the walnuts, place them in a dry pan over medium heat for about 2-3 minutes, stirring frequently until they are golden brown and fragrant.
